During the break the front of house and back of house collaborated on a very fun and exciting project, Talisker on Main Gardens. We have put in two garden areas – making us the first dining establishment on Main Street to offer fresh onsite produce and herbs in our dishes and signature cocktails.
Our first garden area is in a small space just next to the restaurant where after much work found already existing garden beds that just needed a little love and love is what it received. Executive Chef Briar Handly, Sous Chef Phil and the BOH spearheaded these gardens and heart and dedication really shows.
Our second garden spearheaded by the front of house team is a roof top garden that can be seen from the LIB window. Not only is this a beautiful addition to the view it is going to add so much to our menus. The roof top garden was spearheaded by the FOH. I have to give special thanks to our head bartender, Clint Goode for executing and building our vision he has gone above and beyond as usual. The roof top garden is on a full drip watering system with a timer and a drainage system that recycles the water runoff. John Gaspa is spearheading a mushroom project up there as well. There is a small a frame where we are going to put inoculated logs. We also built some smaller planter boxes on the patio. There is a third garden in the works in a space that was offered to us by our neighbors after seeing the other gardens… how is that for local support!
Once the garden takes off, all of our specialty cocktails will be Talisker on Main Garden inspired. I am so proud and impressed by the love and dedication our staff has shown to this restaurant and this project.
